Cheryl's Olive Oil Cake

Cheryl is our newest member of the Lucketts family.  Cheryl owns the Cowbell Kitchen and is our new permanent fixture at the shop, offering gourmet sandwiches and goodies, all locally grown.  If you've had the fortunate chance to taste Cheryl's food, you know it's to die for.

She promised to share some of her recipes on our blog {lucky us!}.  Here is her recipe for her famous Olive Oil Cake that features citrus.  Yummmm!

In the thick of winter, is when citrus is at its best. Near the top of my list are the blood orange and Meyer lemons. They will enhance everything from sauces to desserts and will add a note of brightness to almost anything they come in contact with.

Fun facts:
Blood oranges pairs well with anchovy, garlic, red onion and chocolate.  Meyer lemons are a cross between a lemon and a mandarin orange.

Try this simple olive oil cake which you can flavor with either citrus.



Ingredients
  • 3 large eggs, beaten
  • 2 cups granulated sugar
  • 12 ounces extra-virgin olive oil
  • 10 ounces milk
  • 2 ounces fresh orange or lemon juice
  • 3 teaspoons orange or lemon zest
  • 2 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon kosher salt
  • 4 ounces blanched almonds, finely chopped (optional)
  • Powdered sugar, for garnish

Directions

Preheat oven to 350 degrees F.    Butter a 10-inch cake pan.

In a large bowl, whisk together the eggs, sugar, olive oil, orange or lemon juice, and zest. Sift together the flour, baking soda, baking powder, and salt. Mix the dry mixture into the wet mixture.   Whisk until well blended. Fold in the almonds.

Pour the mixture into the buttered cake pan. Bake for 1 hour. Place on a rack to cool. Run a knife
around the edges and place it on a plate. Sprinkle with powdered sugar and serve.

  2. Gosh this sounds good. I had her kale/potato/sausage soup at the sale last weekend and it was SCRUMPTIOUS! I'll def be back for more! :) P.S. Did that vintage white fridge sell? I'm so coveting after it and am kicking myself for not purchasing it last weekend. :(
